Chicken Orzo with Sun-Dried Cherry Tomatoes & Asiago Cheese

Spring is here and with warm weather comes friendly gatherings and cookouts. If you are like me, you will always want to bring something tasty to the table that both adults and kids will enjoy, but also, that doesn’t take a lot of time to make it.

Below you will find a yummy recipe of orzo pasta paired with chewy sun-dried cherry tomatoes and sweet corn that is easy to make and it’s sure to wow the crowds.  Add juicy chicken breast which gives the necessary protein to complete the meal.  Creamy goat cheese and salty asiago are used to finish off the dish.

Chicken Orzo with Sun-Dried Cherry Tomatoes & Asiago Cheese

Ingredients:

1 box orzo
1 pound Amish thin chicken breast cutlets
paprika salt and pepper
1 small container cherry/grape tomatoes
1 jar of sun-dried cherry tomatoes
Oregano, thyme
1 package of frozen sweet corn
Goat cheese optional
Asiago cheese to taste

You prepare the orzo in a large pot of salted water. You drizzle with olive oil in the pasta water, so it’s not sticking together. While this is cooking you either saute or bake the chicken breasts with the sun-dried cherry tomatoes. I season mine with salt pepper and a paprika mix. Towards the end of the cooking if you saute them in a pan add the corn until soft and fully cooked.
In the meantime you cut the cherry tomatoes in half, place them in a large serving bowl where you will put the orzo and the rest of the ingredients. Season them with oregano thyme and salt.
Once the orzo is done scoop with a pasta spoon into the serving bowl where you placed the tomatoes. It’s ok for some of the pasta water to transfer. The heat of the orzo will warm up the tomatoes. Add asiago and goat cheese stir so it’s distributed evenly. Finish with the chicken sun dried tomatoes, corn mixture. You can eat warm or at room temperature, enjoy!

Nadia Kotsonis was born and raised in Greece and lived there until she was 25 years old. She moved to the United States when she met her husband Nick, a Greek-American while on vacation in the Greek isles. 11 years since then have passed and they have two beautiful boys that keep them busy and melt their hearts: Dimitri (age 7) and Constantine (age 3). Nadia has a college degree from the University of Athens where she majored in Theology, Philosophy and Psychology. She also holds a Master Instructor Certificate from Microsoft. In her early childhood what started out as a hobby and later turned into a big passion was her love of ballet. At the age of 4 she began dancing and eventually made it into a Professional Dance School where she studied ballet, contemporary, tap, jazz, character, history of dance, anatomy and music. When Nadia first came to the U.S. she lived with her husband in Cincinnati where she worked as an IT administrator for a non-profit HR company. After a few years when their first child was born they moved to Columbus and couldn’t have been happier with the change. Nadia now works as a Greek School Teacher at the Greek Orthodox Cathedral on High St and is a member of the Greek School Board there as well. She also teaches Barre at Physique Fitness Studio in Grove City where she is a manager and a master Barre trainer. Nadia loves teaching and seeing everyone smile. When not working she enjoys reading, cooking and traveling with the family. They travel every year to Greece to see Nadia’s family and spend some time enjoying the ocean and the tasty food.
