February Favorites: Winter Recipes For Long Days

The holidays have come and gone, and with them, the cozy feelings and the magic of winter have fled. We begin to prepare for the shortest month yet seemingly longest stretch of Winter in Ohio: February. Maybe you have been tucking away ideas for games, activities, and crafts for your family to use on those cold windy days, but have you been filing away ideas for winter recipes as well? After all, cooking can become another way to engage the whole family on those stuck-inside blustery days and meals are a great way to bond. Here are a few links to easy and cozy favorites from our home!

Flatlander Chili

This recipe makes enough when hosting a gathering or to plan on leftovers! This recipe is not complicated, can be made in one-pot or adjusted and made in a slow cooker, and the ingredient list is manageable. Bonus: Depending on your child(ren)’s skill level and your desire to supervise, kids can be included in chopping vegetables and measuring spices.

Baked Chicken Nuggets

We like to adapt recipes to our own liking. Sometimes we will make our own breadcrumbs, use an egg instead of butter, or add a few additional spices into the called-for breadcrumb mixture. Include your kids in this meal preparation for added sensory experiences! Just remember to wash hands well before and after breading the chicken.

Slow Cooker Honey Sesame Chicken

This easy slow-cooker recipe is great served over rice and with a side of roasted brussels sprouts, asparagus, or broccoli. We’ve also passed on the rice to pair the chicken with sweet potatoes and a veggie or two.

Lentil Soup with Beef

This recipe, much like the Flatlander Chili, makes enough when hosting a gathering or to plan on leftovers. We’ve adapted this to whatever cut of beef we have available. Most recently, we made this recipe using ground beef instead of beef chuck cubes and it remained delicious. Again, depending on your child(ren)’s skill level and your desire to supervise, kids can be included in chopping vegetables and measuring spices.
