Since it’s almost Halloween, today I’m bringing you a fun Pumpkin Pudding Cup recipe the kids can help with and the whole family will enjoy!

Are you a fan of Halloween?  As a child I absolutely loved it!  My mom’s a great seamstress and every year she’d take us to Jo-Ann Fabrics to pick out a costume pattern she’d then make for us.

Our costumes ran the gamut from a lion, to a clown and a 50’s poodle skirt girl!  It was always so much fun!  I probably never said it much as a child, but thank you mom for doing this.  You were (are) a rockstar and made us look so good in the school costume parades! Oh and yes, that would be yours truly below as a third grader all dressed up for the big day 🙂

Pumpkin Pudding Cups

As an adult, I wasn’t really a huge fan of the holiday until baby girl came along. She’s only had one Halloween so far and it was so much fun to dress her up!  I am unfortunately not a seamstress like my mother, but it was fun to go out and buy her a costume.  Last year we dressed her as a doctor (for my husband) and this year she’s going to be an Ohio State cheerleader, which was for me. Can you tell?

With all the fun of dressing up, don’t forget about the Halloween treats! I mean, isn’t that what kids love most about this day? These pumpkin pudding cups are so easy to make and it’s definitely something the little ones can help with too.  Plus, I’m sneaking in some canned pumpkin, which ups the health factor ever so little.  You try to get those veggies in wherever you can, right?

The recipe starts out with an instant pudding mix.  After whisking in some milk, add in some cinnamon and pumpkin puree to give it that beautiful orange color.  After folding in the cool whip, you’re done! Super easy, right?  This would be a great recipe to involve your kids too, whether they’re old enough to measure out ingredients or young enough to just help with the stirring.

After making the pudding, spoon it into a small plastic cup.  If you want, you can decorate it to look like a carved pumpkin, like I did. I used a permanent market, so if your kids are old enough to use one you can have them help!  If not, you can decorate it yourself or just leave it plain. Stick in a green Twizzler for the stem and you’re done!

Pumpkin Pudding Cups
Serves: 4

Ingredients
1 small packet instant vanilla pudding mix
1 1/4 cups milk (2% preferred)
½ cup pumpkin puree (not pie mix)
1 tsp. cinnamon
1 cup cool whip, thawed
2 green Twizzlers, cut in half

Directions
1. In a large bowl, whisk together the pudding mix and milk until thickened, about 2 minutes.
2. Stir in the pumpkin and cinnamon and then fold in the cool whip. Set in the refrigerator to thicken while you make your pumpkin cups
3. Optional Step: Have each child take a clear plastic cup and draw a spooky pumpkin face on it. Set aside to dry.
4. Once the cup is dry, fill each one with the pumpkin pudding and stick a Twizzler half in the middle for a stem.
5. Eat and enjoy!

  1. I was looking for a great school recipe the students and I can make together for Halloween in class that is nutritious but easy to make. Thanks for the great recipe, I loved the green Twizzlers for the stem.
