Winter is here and it’s time for some comfort snacking. The Sticky Honey Nut Bars are perfect snacks without piling up the calories. Kids love it too!
I’ve made this the other day because I had all the ingredients at home, you can add whatever your heart desires. Even though they are sticky as the recipe calls it they are also very healthy because in the end it’s just honey and nuts. Caution: VERY addicting!!!
Ingredients:
1 cup toasted unsalted almonds
1/2 cup pecans
1/2 cup peanuts
1/2 cup cacao nibs (optional)
Handful of goji berries
Handful of cranberries
6-7 Tbsp honey
Zest of an orange
Sea salt
Coconut Spray oil or Grapeseed Spray oil for coating
Sesame for sprinkling (optional)
Directions:
Preheat oven to 350 F.
Chop by hand or with a food processor the nuts to your desirable size. You can also add different types of nuts and also unsweetened shredded coconut.
Line an 8×8 baking pan with parchment paper, leaving flaps on all 4 sides. Spray a little bit of Pam, Coconut oil spray or grapeseed oil spray.
Combine all ingredients except honey and stir until well combined. Add honey and pour mixture into the pan. Press down with hands covered in oil or spray a plastic spatula and then press down.
Bake for 20 minutes until sides are bubbling and golden brown.
Let it cool for 30 minutes flip it into a wire rack and press together to reshape back to square. Allow to cool completely and cut into bars. I added some sea salt after baking as well, but it’s up to you.
To store the bars wrap them individually in parchment paper and place them in a ziplock bag. Eat within a week. I did within 4 days 😉
Calories for these are around 200-250 depending on the size of the bar and the ingredients.
